Garlic Vermicelli Steamed Shrimp



Have you ever had the pleasure of dining at a restaurant and indulging in the succulent flavors of garlic vermicelli steamed shrimp? If not, prepare to tantalize your taste buds with this exquisite dish, which can be served as a fake banquet dish to impress guests or as a comforting and delicious home-cooked meal.

Let's start with the ingredients. You will need 10 white prawns or grass prawns, 2~3 vermicelli, 4 tbsp minced garlic, 4 tbsp chopped green onion, 1 tbsp sugar, 1 tbsp light soy sauce, 1 tbsp fish sauce, 1 tbsp wine, 1 tbsp oyster sauce, a dash of pepper, and just enough water to slightly cover the ingredients.

The practice, as with any culinary masterpiece, requires a delicate touch. Begin by soaking the vermicelli until it softens. Next, wash the prawns and cut off the beard and intestines before cutting the back. If you do not have a sharp enough knife, cooking scissors will do the trick. Be sure to remove the small black stomach bag inside the prawn's eyes to eliminate the fishy flavor.

For the sauce, mix the chopped green onion and minced garlic together and blend thoroughly. You can adjust the sauce's taste at this point, and it can be a bit heavier than usual to add a bit of zing.

Once the vermicelli has softened, spread it on a plate and lay the open-backed shrimp side by side on top. Stuff the onion and garlic sauce evenly on the back of the shrimp and pour in the juice.

Now for the steaming process. Turn on the steamer and, when the water boils, move the finished shrimp plate into the pot. Cover the pot, turn to medium heat, and steam for about 8 minutes. Once done, lift the lid and pour hot oil over the shallot and garlic.


Tips for success: Do not steam the prawns for too long, as overcooking will spoil the meat. Taste the seasonings and adjust them to your liking, as everyone's preferences are different, and the saltiness of various sauce brands also varies.
