Salivating Chicken

What You'll Need

To make this tantalizing dish, gather these ingredients: two chicken drumsticks, red chili oil, pepper flakes, salt, vinegar, light and dark soy sauce, sesame oil, minced garlic, a cucumber, coriander, and optional peanuts.


Instructions

Step 1: Get the chicken ready by seasoning the inside of the thighs with salt and kneading thoroughly. Then, tie up the drumsticks with string. Don't discard the chicken leg bones; they can be boiled with the meat for added flavor.

Step 2: Boil the chicken legs in a smaller pot with two pieces of ginger. After boiling, turn off the heat and cook for eight minutes. Don't uncover the pot; simmer for an additional five minutes. Don't overcook, or the chicken will become dry.

Step 3: Cool the cooked chicken legs in ice water to tighten the skin and enhance its springiness. While the chicken legs are cooling, adjust the sauce to your liking. Mix light soy sauce, vinegar, and sugar in a ratio of 3:1:1, and add dark soy sauce for color. Add salt according to your taste, then add onion, ginger, garlic, coriander, sesame oil, red oil, and pepper flakes.

Step 4: Shred the cucumber and place it on the plate. Cut the chicken legs into small pieces and put them on top of the cucumber.

Step 5: Pour the sauce generously over the chicken and sprinkle with chopped peanuts and chives.

Helpful Tips

Chicken legs can be boneless, which is also delicious. The cooking time is the same, 8 minutes for boiling, and 5 minutes for simmering. If using chicken wings, adjust the cooking time accordingly.

Use rapeseed oil to fry the red oil for extra fragrance. If it's not available, use regular vegetable oil.
