This recipe will teach you how to make a delicious and juicy roasted chicken with crispy skin and the added tang of lemon and herbs. Follow these simple steps to create a perfect roast chicken that is sure to impress your family and friends.
Check The Ingredients:
1 spring chicken
2 garlic cloves
1 sprig of rosemary
Salt (amount equal to the weight of the chicken and water multiplied by 1.2)
Sugar (amount equal to the weight of the chicken and water multiplied by 1%)
1 fresh lemon
Butter or olive oil
Instructions:
1. Defrost and wash the spring chicken.
2. Remove the wishbone located in the chicken breast near the neck. Use a knife to easily remove the V-shaped bone.
3. Prepare the marinated chicken using the balanced salt water method. To do this, add water to a pot and submerge the chicken. Add salt and sugar to the water, and stir until dissolved. Add in fresh rosemary, garlic, and lemon juice to the marinade.
4. Refrigerate the chicken in the marinade for 24 hours.
5. After marinating, take the chicken out of the refrigerator and let it sit at room temperature for a few hours. Dry the surface of the chicken and use a blow torch to burn the chicken feathers on the skin. This will help to remove any excess moisture from the chicken skin.
6. Use your hands to gently pull the mucous membrane between the skin and the meat, being careful not to break the skin of the chicken.
7. Spread butter or olive oil between the meat and skin to block the transmission of moisture between the two. Apply spiced cream or refreshing olive oil to increase the flavor of the roasted chicken.
8. Stuff the lemon slices and thyme water that were used to marinate the chicken into the belly of the chicken. This will add moisture and flavor to the roasted chicken.

Tie the chicken using cotton rope to give it a spherical shape that is more beautiful when served on the table. Align the cotton rope and make a slipknot. First, put the slipknot on the chicken buttocks and tighten it.
Then wrap the left and right thighs around each other, cross the rope forward and tighten so that the ingredients stuffed in the chicken breast will not fall out. Tighten the two legs and tie a knot.
Finally, wrap the rope around each chicken wing once, and tie it in front of the chicken chest.
Some Additional Tips
Preheat the oven to 400°F (200°C). Place the chicken in the oven and roast it for approximately 60-70 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
To make the skin crispy and golden, fry each side of the chicken in a frying pan until the skin is crispy and browned. Alternatively, use a cyclone oven to evenly distribute the heat.
Let the chicken rest for 10-15 minutes before carving and serving.
