Check the ingredients:

1 three-yellow chicken

Salt

Ginger

Garlic

Star anise

Cooking wine

Light soy sauce

Rice vinegar

Shallot

Pepper oil

Red pepper

Bean drum

Sesame oil

Sugar

Bay leaves

Vegetable oil

Now follow the instructions below:

First, after the three-yellow chicken is slaughtered, rinse it thoroughly and add ginger, green onions, and cooking wine into a pot. Boil the chicken for around five minutes, and then turn off the heat. Cover the pot and let it soak for 40-50 minutes.

After soaking the chicken, take it out and put it in cooled cold boiled water to rinse it in cold water to keep the skin tender and smooth.

Heat up some oil in a pot, then put chili, and star anise into it and fry until it becomes dry. Remove the water and let it cool.

Chop the chili into powder, put it in a high-temperature resistant bowl, and add an appropriate amount of fermented soybeans.

Heat up some oil in the pot until it's smoking hot. Turn off the heat and let it cool down to 80% hot. Pour the oil into the minced chili and soak it.

Next, cut the chicken into small pieces, then mix it with salt, ginger, garlic, shallot, pepper oil, red pepper, bean drum, sesame oil, sugar, bay leaves, light soy sauce, and rice vinegar.

Finally, pour the mixture over the chicken, stir well, and let it marinate for at least 30 minutes before serving.

Some additional tips:

The cooking time may vary depending on the size of the chicken.

Use cooled cold boiled water to rinse the chicken to keep the skin tender and smooth.

Adjust the amount of chili according to your preference for spiciness.

Marinate the chicken for at least 30 minutes for the flavors to fully absorb.
