Drool Chicken



Prepare to tantalize your taste buds with a dish that will make you drool - the drool chicken!

For this recipe, you'll need a three-yellow chicken, ginger, onion, cooking wine, oil, pepper, three naphthalene, star anise, tempeh, garlic, onion, vinegar, soy sauce, sugar, and sesame.

To start, after you've killed the chicken, handle the internal organs, rinse them with water, and place them in a pot. Add ginger, green onions, and cooking wine, and cook on medium heat for about five minutes (depending on the size of the chicken, you may need to cook it longer). Once done, turn off the heat.

Next, cover the pot and let it soak for 40-50 minutes. After soaking the chicken, take it out and rinse it in cold water to keep the chicken skin tender and smooth.

Now, put a small amount of oil in the pot. When the oil is 30% warm, add chili, trinaphthalene, and star anise into the pot and fry until the water becomes dry. Remove it and let it cool. Then chop it into powder and put the chopped chili powder in a high-temperature resistant bowl. Add an appropriate amount of fermented soybeans.

Heat the oil in the pot. Turn off the heat when the oil is smoking. When the temperature drops to 80% hot, pour the oil into the minced chili and soak it.

For the sauce, mash ginger and garlic into a puree with a garlic masher, and cut the green onions into chopped green onions. Put the ginger and garlic paste in a bowl, add vinegar, light soy sauce, sugar, and other seasonings and stir well. Then use a sieve to filter out the residue of garlic and ginger.

Mix the ready-made chili oil with the red oil on the surface into the prepared sauce, and finally sprinkle with sesame seeds. If you have peanuts, you can add some peanuts to make it more fragrant.

Finally, cut the chicken into pieces of appropriate size, put them in a bowl, pour over the adjusted chili red oil, and sprinkle with chopped green onion. This dish is sure to make your mouth water!
